Peach-Wonton Salad with Grilled Chicken
(My own creation and the ONLY salad my hubby ever gets excited about seeing on the table.)

Peach Balsamic Dressing:
  • ¼ c. balsamic vinegar
  • 2 Tbsp. olive oil
  • ½ c. canola/vegetable oil
  • ¾ c. peach jam
  • 1 t. mustard
  • 1 t. salt
Whisk ingredients and chill until ready to assemble salad.

  • 1 head iceberg lettuce, torn in pieces
  • 1 bag baby spinach, wash and remove stems
  • 2 chicken breasts, seasoned with salt and pepper and grilled 5 min. per side
  • 1/2 lb. bacon, fried and crumbled
  • 3 fresh peaches, peeled and sliced
  • 1 c. sliced almonds, sugar cured (To sugar cure, sauté sliced almonds in 2 T. butter.  Sprinkle 3 T. sugar over top. Stir and remove from heat. Set aside.)
  • ½ pkg. wonton wrappers, sliced in ¼” strips and fried in additional vegetable oil. Drain on paper towel. Set aside.
Combine salad ingredients with dressing just prior to serving. Serves 15-20.
