Peach-Wonton Salad with Grilled Chicken

Peach Balsamic Dressing:
- ¼ c. balsamic vinegar
- 2 Tbsp. olive oil
- ½ c. canola/vegetable oil
- ¾ c. peach jam
- 1 t. mustard
- 1 t. salt
Whisk ingredients and chill until ready to assemble salad.
Salad:
- 1 head iceberg lettuce, torn in pieces
- 1 bag baby spinach, wash and remove stems
- 2 chicken breasts, seasoned with salt and pepper and grilled 5 min. per side
- 1/2 lb. bacon, fried and crumbled
- 3 fresh peaches, peeled and sliced
- 1 c. sliced almonds, sugar cured (To sugar cure, sauté sliced almonds in 2 T. butter. Sprinkle 3 T. sugar over top. Stir and remove from heat. Set aside.)
- ½ pkg. wonton wrappers, sliced in ¼” strips and fried in additional vegetable oil. Drain on paper towel. Set aside.
Combine salad ingredients with dressing just prior to serving. Serves 15-20.
Note: This salad wilts quickly. It can also be served by placing lettuces in a bowl and serving all toppings and dressing on the side.
